We are excited for Halloween to get here! So excited to take Kyndall trick-or-treating for the first time and dress her up in her little bee costume.
All of the little kiddos dressed up in their costumes today to spook their Kindermusik teacher, Ms. Donna. Here is Kyndall with a few of her spooky friends from class.

We made and packaged up some yummy treats for Ms. Donna and Kyndall's spooky friends. Sweet Potato Chocolate Chip Muffins! Oh. My. Gosh. They are beyond delicious. I got this recipe from Avery's mom, Deborah, and suggest making these for a sweet fall treat! Easy, peasy...just follow the recipe!
Sweet Potato Chocolate Chip Muffins
2 Medium Sweet Potatoes
1 cup flour
2 cup light brown sugar
2 tsp cinnamon
1/2 tsp salt
2 tsp baking soda
3/4 cup vegatable oil
4 eggs
1 cup mini chocolate chips
Make sweet potato puree by cooking sweet potatoes in boiling water until tender. Puree in food processor.
Pre heat oven to 350 degrees. In a large bowl, combine flour, cinnamon, salt and baking soda. In another bowl, mix together oil, sweet potato puree and eggs. Make a well in the dry ingredients and stir in sweet potato mixture. Fold in chocolate chips. Spoon into mini muffin tins lined with paper cups. (I used regular muffin tins and made 24). Fill to top. Bake 15-20 minutes. Cool on racks. Makes 4 dozen. Enjoy!
